What Vegas Confirmed: Mess Hall Is Built for the Franchise Playbook

I just got back from the IFA Convention in Vegas, and if you’ve ever been to a franchise conference in Las Vegas, you know two things:

1. The coffee is strong.

2. The conversations are even stronger.

Between the keynote sessions, hallway conversations, and late-night debriefs, one theme kept coming up again and again:

The franchises that will win in 2026 are the ones built on simplicity and scalability.

And I found myself smiling because… that’s exactly how we built Mess Hall.

Rule #1 for 2026: Simpler Systems Outperform Clever Ones

One of the biggest takeaways from IFA was this:

Complexity kills adoption.

The brands that scale aren’t the ones with the most complicated systems, they’re the ones that are easy to understand, easy to execute, and easy to replicate in every market.

Wait… A “Fake Food Cafeteria”?

When I tell people we run a “fake food cafeteria,” there’s always a pause.

Sometimes it’s:

• “Wait… what?”

• “So… it’s not real food?”

• “Is it like a museum?”

• Or my personal favorite: “Do people eat it?”

Explaining that we’re a creative, customizable, immersive pretend food experience can take a minute.

But here’s the funny part:

What we do might take a second to describe — but how we operate is incredibly simple.

Why the Mess Hall Model Works

Our model works because it’s built on systems that scale.

Mess Hall runs on:

• Clear roles

• Streamlined operations

• High-margin product lines

• Repeatable party & group experiences

• Easy-to-train staff systems

• Strong visual merchandising

There’s no complicated kitchen buildout.

No food waste.

No health department inspections.

No shifting food costs.

It’s operational simplicity disguised as imagination.

And that’s exactly why it scales

Built for the Future of Retail

We didn’t build Mess Hall to be trendy.

We built it to be durable.

The world is moving toward:

• Experience-based businesses

• Interactive retail

• Customization

• Social media-friendly moments

• Family connection

And somehow, our “fake food cafeteria” checks every box.

Yes, it can take a minute to explain.

But once you see it — it clicks.

And once you run it — it works.

That’s the beauty of simplicity.
